Wakey, wakey, eggs and bakey...

This is the wake-up jingle I sing to my daughter every morning, which annoys her to no end because (1) she is not a morning person, and (2) there never is any "bakey". Not on weekdays, anyway. I'm too lazy busy to cook bacon. Anyhoo, since so many of you enjoyed the word "cackleberry", I thought I'd shamelessly capitalize on that and share with you a favorite breakfast recipe featuring "fresh from the hen" cackleberries.

You'll need a slice of bread, the center of which you've pinched a hole in; some butter, and extra virgin olive oil (MUST be extra virgin). Be more generous with the oil than the butter.

Heat the oil and butter at medium heat in a non-stick fry pan. Olive oil burns very easily--the butter keeps it from doing that. I don't understand all of the science, but it works.

Crack the egg so that it sits nicely in the "hole" in the bread. Let it fry for a few minutes.

Flip it over and let it fry on the other side.

It's really delicious--the bread is all toasty-crunchy, and the yolk of the egg is still soft. It's even better if you use large slices of Italian bread. Enjoy!

Haha you're right, that jingle IS annoying! And now when you say it in the morning I always tell myself, "She doesn't mean it--go back to bed" ;) xo

She liked to live on the edge. Luckily I didn't sleep with weapons...

We make this too, though my favorite is with sourdough bread. My grandmother used it call it an egg "in a frame" and I guess that name just stuck in our house. :)

I had never heard of these until I lived in Boston. In Boston they are called "Eggs in a Basket." They also eat ketchup on their eggs up there.
I like to cook mine on really low heat so the egg yolks aren't snotty - I believe you call this practice "cooking the hell out of the eggs."
And I agree with Ms. Fowlergirl, that saying is obnoxious, even when Zac in his ever sweet and loving voice says it.

Rattling On, thank you. I love them too; I got them at Anthropologie on the sale shelf. Anthropologie is my dream store, but I can't afford anything there except when it goes on sale, and even then I'm pushing it. I have an Anthropologie taste and a thrift shop purse.

Hello, Anonymous, while like Julia Child, I adore butter, and I mean adore; margarine has never crossed my threshold. Olive oil is definitely better for frying bread; it makes it crunchy. And extra virgin olive oil is not only good for you, it tastes good.

Looks good! I do something similar, but I toast bread in the toaster. Meanwhile I cook one egg in some extra virgin olive oil. When the egg is done I drizzle a little of that hot olive oil on the slice of toast and then slide the egg on top. I also like to grill a fresh tomato in the same pan...an idea I got from the famous English "fry up" breakfast.

Butter is better, of course, but I'm trying real hard to not to eat it, because I love real butter way too much!

Sara - My sister and I rented the movie Spanglish once and were so confused as to what even happened in the movie and what the plot was, but in the opening credits there is a picture of this sandwich: fried egg, melted slice of cheese and tomato between toast. My sister and I frequently make that sandwich, calling it the Spanglish sandwich as it is the only thing we got from the movie. It is also good with avacado and turkey!

YUM!! Memories come rolling in! I grew up calling these "Toad in a Hole" - not sure why - and definitely not as appetizing as "Egg in a Basket" or "Egg in a Frame" - but there it is.

And DEFINITELY butter!! :-)

My husband taught me this one when we first met. He calls it "egg in a hole" and when we make the hole in the bread we butter both sides and fry it in the frying pan as well, and well, that is my favourite part. I put jam on it while it is still warm and...yummy!
